Indian chicken curry is what I make when I want a warm dinner with flatbread on the side. The chicken finishes in a thick orange-red tomato and coconut sauce, then gets a white coconut cream swirl and chopped cilantro just before it reaches the table (I like that cold cream against the hot sauce).
I use a heavy cast iron skillet at the start, putting the chicken in one uncrowded layer and leaving it alone for 3 to 4 minutes until a deep golden-brown crust forms. The browned bits stay in the pan for the sauce, and I set the chicken aside before it cooks through (the pan looks a little messy, but that's what I want).
The onion needs its full 5 minutes to soften. Then garlic and ginger get exactly 60 seconds before the spices go in, and I stir the spices in the oil for 30 seconds. The sauce gets its orange-red color there and doesn't look dull.
After the chicken returns, the sauce should reduce enough to coat the back of a wooden spoon while it simmers under a lid. I ladle it into a ceramic bowl, swirl in the reserved cream, and add cilantro right before serving. It also works for meal prep, though I save the garnish for each bowl.

Heat 1 tbsp (15ml) olive oil in a skillet over medium-high heat.

Arrange the chicken in a single uncrowded layer and sear it undisturbed for 3-4 minutes, until a deep golden-brown crust forms.

Lower the heat to medium and add the remaining 1 tbsp (15ml) olive oil.
