Pumpkin spice oatmeal starts at a bubble, then cooks over low heat so the oats soften without turning to paste, and I make it when I want a warm breakfast with pumpkin puree and sticky dates cooked into the pot. The dates leave a caramel note that I like with the spice, especially when the bowl is warm.
I start with a one-to-two ratio of oats to liquid, and only change it when I want a different spoonful. Add an extra 1/2 cup of almond milk or water for a looser bowl. For a cream-of-wheat texture, use an extra 1/4 to 1/2 cup of milk or water before cooking. That changes the bowl more than extra cooking does.
Protein oats cook on the chewy side, so I mix them with rolled oats when I have both in the pantry. Homemade almond milk makes the oatmeal creamy, though any creamy milk works here. I prefer a homemade pumpkin spice mix with Ceylon cinnamon, ginger, nutmeg, allspice, plus black pepper, and it has more warmth than the jars I buy (I like the little heat from the pepper).
When the oatmeal is finished, I spoon it into a bowl and top it with cold milk and maple syrup, and I add an extra sprinkle of pumpkin spice. I don't skip it. The cold milk against the warm oats is how I serve it, with the dates tucked all through the bowl.
