This steak and avocado bowl takes 25 minutes from start to finish, and you can build the bowls at the table once the quick cooking is done. Marinated steak, avocado, and cilantro-lime vinaigrette go over quinoa and greens, with lime giving the dressing a tang I like with the steak.
I use a grill or large cast-iron skillet over medium-high heat, and if the pan doesn't have room for all the steak, I cook it in batches. A crowded skillet traps steam and leaves the outside pale. After 4 to 6 minutes per side, I rest the steak for the full 10 minutes, then slice it thinly across the grain.
The blender dressing is fast enough to make while the steak marinates, and I like that it coats the toppings without turning the bowl into a heavy salad, especially with the beans in the bowl.
