I make this chocolate mousse filling for cakes and pastries that need to hold their shape. Cooled melted chocolate folds into whipped cream for a light filling with a clear chocolate taste, and it pipes onto cupcakes or spreads between cake layers without gelatin.
Start with semi-sweet or bittersweet chocolate in the 60% to 72% cacao range, then melt it at 50% power in 30-second intervals, stirring between each one, and let it cool at room temperature for about 10 to 15 minutes. Hot chocolate turns whipped cream into a soupy mixture.
The cream and bowl need to be cold before you begin. Beat the cream with powdered sugar and vanilla until stiff peaks form, then stop, because overworked cream goes grainy and stirring the chocolate into it knocks out the air you just whipped in.
I use two bowls and a rubber spatula, even for a small batch. Fold one-third of the whipped cream into the chocolate first, then bring in the rest with broad turns from the bottom of the bowl. Stop when the white streaks are gone and the mousse is one even color.
Why you'll love this recipe
- It holds its shape in cake layers and cupcakes. It also works in tart shells, cream puffs or eclairs, and donuts.
- The filling is egg-free, so there's no tempering step before you start folding.
- A chilled bowl and cold heavy cream give the mousse enough lift to pipe onto cupcakes.
- It makes 4 cups. That fills more than one dessert.
- You can layer it in glasses with berries, crushed cookies, cake cubes, or other toppings for a no-bake dessert.
- You can make the mousse ahead. That helps when a cake has several parts to finish.
Ingredients
- •8 oz semi-sweet or bittersweet chocolate (high-quality, 60-72% cacao, finely chopped)
- •2 cups heavy whipping cream (cold, at least 36% milk fat)
- •¼ cup powdered sugar (sifted)
- •1 tsp vanilla extract
Instructions
- 1
Put the finely chopped chocolate in a microwave-safe bowl.
- 2
Microwave at 50% power in 30-second intervals, stirring between each interval, until the chocolate is melted and smooth.
- 3
Set the chocolate aside to cool to room temperature, about 10 to 15 minutes.
- 4
Beat the cold heavy cream, powdered sugar, and vanilla extract in a separate large chilled bowl on medium-high speed until stiff peaks form. Do not overmix.
- 5
Fold about one-third of the whipped cream into the cooled chocolate with a rubber spatula until just combined.
- 6
Fold in the remaining whipped cream gently until no white streaks remain and the mousse is uniform in color and texture. Do not overmix.
- 7
Use the mousse as a filling for cakes, cupcakes, or other desserts, or cover and refrigerate if not using it immediately.
